Canava Santorini Distillery & Museum
Canava has been producing ouzo and tsikoudia since 1974. The adjacent museum opened its doors in 2015 and has been providing guided tours of the distillery and distillation process of these products since.
Ouzo is an appetizer made using the berries of Santorini’s most common grape variety asyrtiko along with star anise, and in this production, saffron. Other flavors like mastic, fennel, cinnamon, cardamom, coriander, and cloves can be utilized. Copper stills are employed for distillation.
Santorini`s signature grape-derived spirit is tsikoudia, distilled from indigenous white grape varieties including asyrtiko, aidani and arthiri. The facility also produces liqueurs utilizing cherries, tentura, mastika tree resin, roses, coffee, aniseed, pears, bananas and parfait d’amour.
Led tours provide insights into different sections of a traditional home, the ouzo distillation room, the tsikoudia distillation room, and conclude with a tasting in the cafeteria. Souvenirs and spirits can also be purchased here.
