Gaia is a laid back and charming beachfront winery, located directly on the water in Perivolia, between Kamari and Monolithos. Housed in a former tomato processing factory, Gaia produces Assyrtiko-based wines, vinsanto, and small quantities of sweet Assyrtiko vinegar. They have an exceptionally impressive wine collection with a distinct aging process. One of their wines, Gaia Thalassitis Submerged, is bottled and aged underwater without oxygen or light. Roughly five hundred bottles are submerged twenty meters underwater off the east coast of Santorini for four years each year. This method has yielded successfully favorable results, giving the wine a vibrant, smoky aroma, and a rounder quality. The distinctive wine bottles even have barnacles attached. Gaia Thalassitis Submerged is their most expensive wine.
While no full fledged dining establishment exists on the grounds, meat and cheese boards can be enjoyed with wine tastings, and meals may be arranged and served at the winery given two to three days notice in advance. Nearby Kamari village located a 20-minute walk away or accessible via public transportation also features eateries. Seasonal tour and tasting sessions are scheduled from May through October, with options of a 30-45 minute experience sampling four wines for eight euros per person or a longer 45-60 minute session with eight wines available for fifteen euros per person. Reservations are advisable for the tours and tastings although walk-ins are accommodated if time allows. Ample parking space is available on location.
Gaia Wines is situated behind the Santorini Airport, right on the Fira-Kamari public bus route, with a stop next door. (If taking the bus, ask the driver to notify you at Gaia Wines as you board.) This is one of two vineyards owned by Gaia Wines in Greece; the other exists in Nemea in the Peloponnese region.
