Anhydrous Winery (previously known as Avantis Santorini) is the sole winery situated in Fira, with its restaurant and tasting room merely a brief 12-minute stroll from Firaโ€™s main square. Deriving its name from the ancient Greek term โ€œAnydros,โ€ signifying waterless, this winery stands as a testament to the resilient nature of Santoriniโ€™s vineyards. Vines thrive on sea mist alone, eschewing the need for artificial watering.

The wineryโ€™s signature wine, the 100% Assyrtiko Anhydrous Icon, is aged in cement egg-shaped containers. This singular technique guarantees a consistent temperature, improving the wineโ€™s attributes and complexity. Four other types of wine are also accessible: Santorini (Assyrtiko, Athiri, Aidani), Afoura (100% Assyrtiko), Grace (Mandilaria, Aidani), and St. Nicolas (Mavrotragano, ฮœandilaria).

The Anhydrous Cellar Door Restaurant offers traditional yet elevated Greek cuisine and wine tastings featuring vintages from both Anhydrous and its sister winery on the island of Evia, Avantis Estate. Its outdoor patio, shaded and tranquil, is perfect for a leisurely meal. For those seeking a hands-on culinary experience, cooking classes are available.

Anhydrous Winery also houses an exclusive medical spa, offering a selection of facial and body treatments. These treatments incorporate their own grape-based cosmetics, capturing the essence of Santoriniโ€™s unique terroir. These cosmetics are also available for purchase on site.
